Clean Eating Southwest Salad
- 2-3 to matoes diced
- 2 avocados diced
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 2 cans black beans rinsed & drained
- 1 c. organic frozen corn
- 1-1/2 c. shelled edamame
- 1/3 c. fresh cilantro chopped
- Toss with:
- ¼ c. olive oil
- ¼ c. fresh lime juice
- 1 clove finely diced garlic
- A few shakes of cayenne pepper
- Salt & Pepper to taste
