Line a large baking sheet with parchment paper. (Make sure the pan you use will fit in your freezer)
In a mixing bowl add yogurt, honey and vanilla. Mix until well combined.
Pour the yogurt onto the baking sheet and spread evenly.
Top with fruit and freeze 4 hours.
Remove from freezer and break into "bark". Serve immediately or store in freezer for up to 2 weeks. (This will not keep in the refrigerator, it must be stored in the freezer)
